dc.description.abstractSustainability is the daily tasks we carry out with the aim of making the most of available resources, thus preventing their depletion and guaranteeing them for future generations. The Food and Nutrition Units (UAN) are establishments responsible for supplying food to a large part of the Brazilian and world population. Therefore, they can generate negative impacts on the environment, such as pollution and waste of natural resources, but if combined with sustainable management, they can bring positive environmental benefits. The proposed project aimed to develop an e-book, which is a digital, accessible and economical resource, which propose ways to implement changes that make these collective food places an environment that applies and promotes sustainability. The information was selected for making the content and material through research on scientific article sites and current academic journals, looking for the keywords: sustainability, food and nutrition unit, environment and preservation of natural resources. The material was produced from the CANVA program and through this it was concluded that it exposed the importance of promoting sustainable activities in the daily life of establishments that produce meals, stimulating actions on how to avoid wasting food, water, electricity, recycling and disposal of waste. garbage and cooking oil, in addition to valuing local farmers, strengthening the economy, generating jobs and income for that population and inducing the use of material, generating savings and preserving natural resources.pt_BR
